| 2-4 large |

Broccoli heads (that are not wilted or discolored) |

| 1 Tbs |

salt |

water |

butter to taste |

| Cut or pop florets from the heads of broccoli to a bite size. Put in pot and add water about 2/3 the depth of the broccoli in pan. (Broccoli will shrink and you will have to much water otherwise) Add salt and a pad of butter and bring to boil. The broccoli will turn to bright green and if your using this for a recipe that will cook it further remove and drain now... however, if this is the main dish... continue till it changes one more time... and dulls in color slightly. TAKE OFF IMMEDIATELY or it will become limp and squishy. |
