cans BLUELAKE canned green beans |

| 3-6 Tbs |

butter |

bacon, hog jawl, or fatback (salt pork will work) |

The brand of bean you buy doesnt matter but they MUST be Bluelake... All our grandmothers knew the good flavor of bluelake beans and didn't grow any others. Always use a quart worth of beans as thats how your grandmother canned them :) |

Drain off the water the beans are packed in and put them into your pot on the stove top... Turn heat to HIGH and add 3 Tablespoons of butter. Saute beans till they begin to fall apart... add more butter if the pan is too dry to allow beans to move freely without scrouching on bottom of pan. Brown the meat you are going to use in the beans once they are about half cooked (this whole process will just be about 5 minutes) |

Once beans have a slight soft look and are beginning to fall apart and meat is browned, add water to cover them and bring to boil. Boil until the water has a nice color and taste. Whole process takes about 30 to 45 minutes depending on how many beans your cooking... and tastes like you cooked them all day :) |
