| I remember when my childhood friend Frances came over and fell in love with these. Mama made them with left-over mashed potatoes but the little french cafe near us does them with grated potatoes. Either way... YUMM!! |

medium potatoes, boiled (may use mashed if you have left-overs) |

large eggs, beaten |

medium onion, finely chopped |

all-purpose flour |

| Boil potatoes, peel them and remove all discoloring. Shred enought patoes to measure 4 cups. Set asside to dry. Pat with papertowel. Mix potatoes, eggs, onion, flour, pepper and salt. Melt margarine in skillet over medium heat. Pour about 1/4 cup batter into skillet for each pancake. Flatten each with spatula into pancake about 4 inches in diameter. Cook pancakes about 2 minutes on each side or until golden brown. Keep them warm while cooking remaining pancakes. Repeat with remaining batter. |
