Mashed potatoes

6 large    potatoes (or one potatoe per person)
  evaporated milk or cream
1 stick    butter *add more or less depending on amt of potatoes used
  salt
  pepper
  sour cream* optional

1 Peel potatoes and remove all green or black found on them. Take out all brown coloration as well. Leave ONLY the purest white potatoe. All the bad flavors associated with potatoes are a color you didnt remove... yellow, green, black, brown, grey... ALL BAD!! REMOVE IT! It's just nasty if you don't!
2 Cube potatoes into 1/2 size cubes by slicing the potatoe first lengthwise then turning and making a second cut across the length of the pieces from the first cut. The third cut should be across the pieces remaining after the first two cuts.
3 Bring to boil in salted water. (I taste my water to see that it is as salty as I would like my potatoes to be.) When edges begin to 'round' and you can thunk a cube with your fingernail and it falls open... they are done.
4 Mash potatoes with potatoe masher (or mixer) until they look even and no lumps... add a stick of butter, and stir till melted. Add a splash of milk to give it a creamy feeling. Add more salt if needed and pepper till you can barely see the flakes in the potatoes.
5 Add a tad of sour cream to taste... my kids LOVE This!
