Julia's Cranberry Salad (Grandma Nelson)
 
 
1 quart    pkg. cranberries  
1 cup    water  
1 cup    diced celery  
1   grated rind of 1 orange, if desired  
1 1/2 cups    sugar  
1 cup    diced apples  
1 cup    chopped nuts  
2 pkgs    Jell-O (strawberry) + 1 tsp gelatin or (1 lg. pkg.)  
 
Boil cranberries, sugar and water together about 10 minutes until cranberries have popped and are tender. Drain off juice and measure. Add enough boiling water to juice to make 3 1/2 cups altogether. Stir this into the Jell-O, stirring until dissolved. Add the cranberries and pour into large 9x13" Pyrex dish. Chill until it starts to thicken slightly (will be syrupy). Fold in apples, nuts, celery and orange rind. Chill until firm. Cut into squares. Serve with mayonnaise if desired.
