| This is how Wayne showed me how to cook red eye gravy when he was up one summer. |

| 2-3 Tbs |
|
crisco or lard |
|
| 1 lb |
|
pkg Stradler's or better sliced country ham |
|
|
|
pot of coffee (double strength) |
|
| 1 cup |
|
brown sugar |
|
|

| Heat crisco and add ham till ham softens and fat crisps. Turn heat down so pan makes dark caramel in the bottom of pan. Remove ham and set asside. Add coffee and bring to boil scraping pan drippings up into the coffee. Add sugar and ham then let gravy simmer and thicken slightly. Serve with ladel to sieve out the red eye from the grease. |
