| Uncle Calvin always added crisco to his pan to start and so do I. |
| |
| 2-3 Tbs |
crisco or lard |
| 1 lb |
pkg Stradler's or better sliced country ham |
pot of coffee (double strength) |
| |
| Heat crisco and add ham till ham softens and fat crisps. Turn heat down so pan makes dark caramel in the bottom of pan. Remove ham and set asside. Add coffee and bring to boil scraping pan drippings up into the coffee. If you don't like your ham to salty return to red eye and serve. Otherwise server along side of ham with ladel to sieve out the red eye from the grease. |
