| Squirrels are so small.. you often add other proteins to them to stretch them out... this one is good for a first time cooking wild meat. You can't really do this one wrong. |

biscuit dough (buttermilk dough is best) |

| Clean squirrel watching closely for hair, fur or dirt.. remove using a knife if you have to... debris can cement onto flesh of wild animals... check for all bruised areas to remove shot... press into flesh to feel for shot... if one is found cut an X over the opening and weed it out with your sharp knife. Soak in salt water to remove excess blood and wild taste. Boil cleaned squirrel in water until very, very tender, remove meat from pot and allow cooling till comfortable to touch... De-bone using your fingers to feel for any missed shot and all small bones. Return to pot and add extra water if needed so that there is room for dumplings on top of meat. Take the biscuit dough and pinch into 1/2-teaspoon size dollops and drop into squirrel liquor, (liquid in which squirrel was cooked) allow enough fluid to cook all dumplings. Cover and let simmer 30 - 45 minutes on med heat or until a dumpling pinched open seems biscuit like on outside and slightly darker in center and more dense. (no longer taste doughy) You may add about 1 cup of sweet milk to the dumplings if you wish, or a dab of butter to broth to make it richer. If you don't have enough squirrel crack open three or four eggs into this mixture. If you do eggs make sure dumplings are completely done then add eggs and cover and simmer again for 10 minutes (less time if you like softer eggs). Do not stir or it will ruin eggs. |

Grandmama Gillespie taught me a lot about squirrel... Granddaddy LOVED to hunt... last time we went squirrel hunting with him he was still faster than me and Joe :) Grandmama was brought up like me... if you kill it you have to eat it. She cooked everything that granddaddy killed!
