Coconut Pies
 
 
2 cup    sugar  
4   eggs  
1 Tbs    cornstarch  
1 Tbs    vanilla  
1 12-oz    can evap milk  
1/2   stick melted butter  
1 cup    coconut (8 ounces)  
2   9-inch pie crusts  
 
Mix all ingredients in order listed, adding melted butter last. Pour into the unbaked pie crusts and bake at 350° until golden brown and set, 30 - 40 minutes.
