Squash Casserole (sour cream)
 
 
2 cups    cooked yellow squash  
1 cup    sour cream  
1   can cream of chicken soup  
1   med. onion chopped  
1   carrot grated  
  lemon peel  
  pkg pepperidge farm stuffing mix  
1   stick margarine  
 
Put 1/4 pkg. stuffing mix on bottom of casserole dish. You will top casserole with the other 1/4 of pkg. Mix all ingredients and layer over stuffing. Put rest of stuffing on the top and dot with margarine. Bake at 350° until brown. (about 30 minutes)
