Pineapple Cheese Casserole
 
 
This is a family favorite for Thanksgiving. We have to keep making the recipe larger as the family grows.
 
1-quart recipe:  
1/4 cup    sugar  
3 Tbs    flour  
4 Tbs    pineapple juice  
1 cup    Sharpe shredded cheese  
1 20-oz    pineapple chunks drained  
1/4 cup    butter melted  
1/2 cup    Ritz cracker crumbs  
 
1 Preheat oven to 350°. Combine sugar and flour, stir in juice, and add cheese and pineapple and mix. Put in greased 1-quart casserole dish combine butter and cracker crumbs and sprinkle over the top put on top bake 350° for 20 - 30 min.
2-quart recipe:
1 1/2-cup sugar 6 T. flour 8 T. pineapple juice 2 c. Sharpe shredded cheese 2 20 oz pineapple chunks drained 1/2-cup butter melted 1-cup cracker crumbs
4-quart recipe
1 1-cup sugar 12 T. flour 16 T. pineapple juice 4 c. Sharpe shredded cheese 4 20 oz pineapple chunks drained 1-cup butter melted 2-cup cracker crumbs
