finely ground plain white cornmeal |

water, to loosen so you can pour |

fat, bacon grease or lard |

| Put heavy 8 - 9 inch skillet on burner to heat. Mix together meal, egg and water to make a batter of right for pouring, adding more water if needed so that batter is not too thick. Melt fat in skillet, deep enough to cuddle batter slightly. When hot, pour batter into pan like pancakes. Turn when golden brown and fry second side until golden brown. Remove and drain on brown paper or paper towels. |
