Corn Tortillas
 
 
4 cup    masa harina  
1/2 tsp    salt  
  2 ½ c hot water  
 
Using hands mix in bowl until all comes together into a soft ball. If using right away divide into 18 golf ball pieces cover with plastic and keep moist while working. If later (use with in 1 day) cover all in plastic bag and set aside in refrigerator. Roll out in between wax paper to 1/16 or 1/8 inch thick. Set aside in plastic wrap until ready to use may be formed 1 day early. To cook: over medium high heat. Peel off plastic. Place in pan. Do not overlap. Cook 30 seconds then turn, cook 1 min then turn, cook 30 sec. or until puffs slightly. Make / cook ahead stack & store 1 day only. Tips: Dries FAST Keep dough covered!! Corn Dough If it cracks you can smooth with fingers thru plastic.
